Following the Salon vintages that have captivated connoisseurs at Red Apron, Salon 2015 continues to affirm this great legacy. From Aimé Salon's ambitious vision in 1905 - creating Champagne from a single village Le Mesnil-sur-Oger, a single grape variety Chardonnay - Salon 2015 is the latest symphony in a 120-year journey pursuing absolute perfection.

Vintage 2015: When nature bestowed magic

The summer of 2015 broke all historical records for sunshine and drought. From mid-May, three consecutive months of dry, sunny weather blanketed the Champagne region. Timely rains in early August along with cooler temperatures helped the grapes complete their ripening process perfectly. By harvest day September 8th, brilliant sunshine had returned to Le Mesnil-sur-Oger.

Essence from legendary chalk terroir

Nurtured on the chalk soils of Côte des Blancs with millions of years of limestone sediment, Salon 2015 carries distinctive mineral signatures. Shimmering golden hue with hints of green and silver, elegant stream of fine bubbles. Delicate aromas of white flowers, linden, honeysuckle intertwined with persistent chalky notes.
